Rice porridge is one of the dishes most associated with Vietnamese “peasants”, with thousand-year-old culture in their local cuisine. Rice porridge, or cháo in Vietnamese, is simply made from water and rice. However, by adding more savoury side dishes with the blank rice broth, it will result in extraordinary soup that reaches far beyond your imagination.
The side dishes are a regular feature in Vietnamese daily meals such as boiled eggs, stew pork, stew shrimp, rare-beef, etc. Most of this food is salty which complements the light flavour of the rice.
Bắc Thảo egg (century egg) is the most special side dish you can ever find. Bắc Thảo egg is made by wrapping a duck, chicken or quail egg in a mixture of clay, ash, salt, lime,… and a husk layer outmost. The egg has a fermented black, moss-green or grey colour inside out. The flavour of Bac Thao egg is very strong, which is a combination of salty and creamy consistency.
